Commonly referred to as "grease traps" these can be mounted in the floor,free standing usually under a sink, and some larger high volume interceptors are "in ground" and have manhole risers outside the facility. All interceptors are designed to have all kitchen basins, dishwashers, and mop sinks plumbed into them. They are required as code in most commercial kitchens and prevent oils, grease, fats, and food particles from entering sanitary sewer lines. These undigested products can cause problems in sanitary sewers. This leads to higher sewer rates and premature failure of sewer systems.
Most municipalities and utility companies do what is known as F.O.G. content testing, (which stands for fat,oils, and grease), if abnormally high F.O.G. is found, the utility will ask to see the grease interceptor maintenance records of all commercial kitchens tied into a given sector of sanitary sewer. Some kitchens can be assesed a fee for the damage caused by a poorly maintained interceptor.
